Below are what you need to make the best chilli crab in Singapore.
Chilli Crab Recipe

  • Sri Lankan Mud Crab - 450g
  • Lime juice - 1 tbsp
  • Egg - 1 (or 2 if you like eggs)
  • Vegetable oil - 2 tbsp
  • Garlic - 8 cloves, chopped
  • Red Chilli - 8 pieces, chopped
  • Spring onion - 2 stalks, cut to 5cm pieces
  • Cilantro - 1 sprig (for garnishing)
Ingredients for the sauce:
  • Water - 1 cup
  • Tomato ketchup - 5 tbsp
  • Sugar - 1 tbsp
  • Corn flour - 1 tsp
  • Salt to taste

Instructions for chilli crab recipe

  1. Heat vegetable oil over high heat
  2. Add chopped garlic and stir-fry for about 1 to 2 minutes or until golden brown
  3. Add chilli and stir fry for another 30 seconds or so
  4. Add in the mud crabs, cover and simmer until crabs are red 
  5. Add in egg(s) and mix well
  6. Squeeze the lime juice over the mixture
  7. Add in scallions, mix everything a little and serve
